Sometimes, the best flavours find you. I was working on a cruise ship in Alaska when it happened – a morning off in Juneau, a dodgy stool day drinking at a taco bar, and a bottle of hot sauce on the table that changed everything.

One taste turned into a full-on moment. I literally drank it. Straight from the bottle. It was spicy, savoury, and packed with deep umami – like Alaska in a bottle. Sea-salty, smoky, and brimming with flavour, it brought a richness that lifted everything it touched.

I went back the next week for more. Once back at BBQ HQ, I hunted down the legends at Barnacle Foods – a small-batch company turning wild Alaskan kelp and other foraged ingredients into hot sauces, salsas, and condiments that bring serious depth and added richness to your food.

Just imagine the scene... having worked a night shift building theatre scenery (the other job!), popping out for some morning drinks... its allowed.. after a night shift.. ordering fresh as you like Halibut Tacos, & Blackened Halibut dirty fries drizzled with the almighty Bullwhip hot sauce. It was epic... and glad to say it can be again, in the safety of home!
