Ackee, a fruit originating in the West Indies, is used in the Caribbean much like a vegetable. Although a red fruit on the outside, the part that is eaten is the yellow flesh that is picked out from around the seeds.
The most popular dish to be cooked with this is Ackee and Saltfish, which a delight to taste.
